Cannot allocate more than ordered to a Sale Order

When fulfilling sales orders, we are not able to allocate more than was ordered on the sale order. As a food manufacturer, it's nearly impossible to produce exactly the amount that a customer orders. Because of these, all of our sales orders are approved with a +/- 10% threshold that is communicated to our customers.
If we produce more than was ordered, we are not allowed to allocate the overage to the open sales order, which requires us to request a new purchase order from the customer before we can allocate the remainder of the produced goods. This is inconvenient for both parties, and I would like to request that a fix for this be added to the Cin7 roadmap. 

It seems as though it should be simple enough to adjust a sales order, even if fulfillments have already begun. In our case, we sometimes have many, many fulfillments for a sales order, so undoing the order is unrealistic.

My suggestions are:
1. Make a sales order always editable, as long as it has not been marked as “completed”
2. Allow fulfillments to pick/pack/ship more than what is reflected on the original sales order
