FEATURE REQUEST (BUG?): Record changes to Sales Order attributes in Activity Log

Currently when a user changes various fields on a sales order (such as Shipping Notes or Carrier) it is logged in the Activity Log. That's exactly how it should be.

But changes to Additional Attributes are not logged. This seems to be an oversight? These fields often contain important data relating to processes and these changes should be included in logs too.
